Stuffed Meatloaf

Recipe Name: Stuffed Meatloaf

Cook time: 1 1/2 hours

Instructions: Prepare your favorite meatloaf recipe. I put 2 eggs, a can of diced tomatoes, diced onion, salt, pepper and crushed crackers in 1 lb. of hamburger.
Put a large piece of aluminum foil on the counter and spread your meatloaf out so you can add your stuffing. I like to use diced fresh tomato, a little fresh garlic, a diced jalapeno and cheese curds( I used the white cheddar with Ranch from Beef Jerky outlet). You can add anything you like, I've tried different things and this is our favorite.
If you want you can do a bacon weave before you put your meatloaf on the foil. After it is stuffed roll it up.
I put it on a perforated pan and use a drip pan to catch the grease.
If I don't do the bacon weave I will occasionally put in a handful of mesquite chips to add just a little smoke.
